Course Content (All Courses)

Our courses focus on the fundamentals of food service sanitation. Topics include:

  • Food borne illness
  • Time/temperature
  • Personal hygiene
  • Cross contamination
  • Cleaning vs. sanitizing
  • HACCP
  • Current food safety issues

 

The format of our program was developed so that everyone learns the required information. This is accomplished by using a variety of teaching methods such as lecture, class discussion such as audio/visual aides, written materials, practice questions and demonstrations.

Our pass rate of the FSSMC exam is excellent. Successful completion of the course with a passing grade on the exam is our number one priority. We assess each participant’s understanding of the course material prior to the exam. Additional assistance is available for those requesting it.

The Illinois Department of Public Health’s Food Service Sanitation Manager Certified (FSSMC) credential requires an individual to complete a 15-hour course and successful completion of an 80-question exam. Renewal of the Illinois FSSMC certification requires a 5-hour refresher course prior to expiration.

Register for the 2-day IDPH approved 15-hour course + exam. Course materials are included. Please bring to class a picture ID.

Refresher Course

Register for the IDPH approved 5-hour refresher course. This course does not require an exam. Course materials are included. This course must be completed before expiration. Please bring to class your IL Sanitation Certificate and picture ID.

Chicago

Refresher Course

The City of Chicago requires the Chicago Department of Public Health Certified Food Service Manager (CDPH CFSM) certificate. Individuals with an IL FSSMC qualify for the CDPH CFSM certificate through reciprocity.

Renewal of the Chicago Sanitation Certificate requires a 6-hour refresher course within the last 30-days before the certificate expires. In addition renewal requires the successful completion of a test.

Register for the CDPH approved 6-hour refresher course + exam. Course materials are included.  This course must be taken 30-days before expiration, not earlier. Please bring to class your Chicago Sanitation Certificate and picture ID.
